Sick!

Well after spending most of Saturday waiting for James to come home from the Auto Wreckers, then spending most of Sunday cleaning the garage out.  I have been rewarded with a COLD!  No not Bird Flu, not Mad Cow, Not Monkey Pox, not even Swine Flu just a damned spring cold.  However it could not be at a worse time.  With the WHO planning on upping the Pandemic to level 6 I may be banned from work!  ARG!  Not that I can’t work from home or that it wouldn’t be nice to be home for a while but….  I just can’t afford to have to use all  my sick days and well I just don’t want to be home if I don’t need to.  It is more productive to be at the office.

Ok so Mother’s Day is this week-end!  What is everyone doing?

Here is a recipe that we have not tried but I am sure we will in the near future!  With Cinco de Mayo being tomorrow, lets have a Mexican flavour to get eveyone back into the loving Mexico mood! 

Beef Taco Skillet 151608

 From Campbell’s Kitchen

 “Favourite flavours from the Southwest, featuring salsa, tortillas and melted cheese, will make this easy skillet supper a family favourite.”

 Prep time 5 mins

Cook time 20 mins

Ready in 25 mins

4 Servings

 Ingredients

1 pound ground beef

1 (10.75 ounce) can Campbell’s Condensed Tomato Soup (Regular or 25% Less Sodium)

½ cup Salsa (your choice)

½ cup Water

6 (6 inch) flour tortillas cut into 1-inch pieces

½ cup shredded Cheddar Cheese

 Directions

  1. Cook beef in 10-inch skillet until well browned, stirring to break up meat.  Pour off fat.
  2. Stir in soup, salsa, water, tortillas.  Heat to a boil.  Reduce heat to low and cook for 5 minutes.  Stir.  Top with cheese.

 Footnotes

Creamy Mexican Fiesta

Stir in ½ cup sour cream with soup.

Ranchero Style

Use corn tortillas instead of flour tortillas and shredded Mexican cheese blend instead of Cheddar.

You could subsitute any meat and I am sure you could do this with veggies too instead of meat! 

Mmmm!  Mmmm!  Mmmm!  Looks good!
